For her Oscar winning role in Monster, Charlize Theron put on 30 pounds.

After the shooting wrapped up, the South African beauty quickly shed the excess weight by taking long walks on the beach and eating healthy meals rich in vitamins and minerals.

How do you stay fit and healthy?

The key to life is balance. Everything in moderation. When I want to have chocolate - dark chocolate, that is - I have it. But I mostly eat foods that make me feel good. As much natural and uncooked food as I can. I do my best to stay away from: processed foods, refined sugar, coffee, and white flour. I snack on fruits and nuts and eat the darkest, greenest, freshest green vegetables in the market. Let's face it: I'm not scared of a big salad. Because of my shooting schedule, I really struggle with maintaining a regular fitness regime. I envy people who go to the gym every day. But I try to stay as active as I can. It's all about moving your body. My husband and I live in New York and are fans of a good walk around the city.

The biggest tip I could give you is to get enough sleep and drink loads of water (a bottle of Fiji water is like an American Express card - I never leave home without it). I truly believe you are what you eat. If you treat your body right inside, you will have a healthy glow on the outside.

Mariska on journalling:
Journal! Write! Cut! Paste! Be right! Be terribly wrong! Be incredibly insightful! Be incredibly mundane. Be all that is inside your heart, your soul, your mind and your imagination. So that you might look back at what you've created and realize how amazing you truly are.

People journal for so many reasons. To record their dreams, write their secret wishes, track emotions, try to get perspective on negative thoughts, figure out patterns in their lives that they'd like to change, articulate their goals, express themselves creatively.

For me, journaling is a tool to become more aware and to process all the stuff that life throws at me. The blank pages of my journal have been a wonderful listener and teacher. They have nurtured my soul and challenged me. I truly believe that you cannot know all of who you are until you sit alone with yourself and let the words flow from deep within.

Sharon Stone

Blonde bombshell reveals how her sugar-busting ways have kept Hollywood sweet on her.

ANYONE who thinks that hitting your 40s means being over the hill should take a look at Sharon Stone.

At 46, the screen siren is as stunning and sexy as ever, with a body to die for. And she still outshines many of her younger Hollywood rivals.

Sharon reckons she is in such good shape because she has a sensible approach to food and cuts down on the sweet stuff.

"I'm not a big eater and I don't drink hard liquor much at all," says Sharon.

"I do everything in moderation. I'm pretty much a healthy person."

Tom Hanks

Tom Hanks has given up coffee - because it made him put on so much weight.
The Oscar-winning actor said: "I had to give up coffee because I was drinking so many lattes. I was putting away half a galloon of milk in a day.

I found maybe I should do something to my diet so I gave up coffee and I'm drinking tea - delightful PG Tips. I don't care about caffeine, it's the milk that was getting to me."

The 'Forrest Gump' star's weight has fluctuated over the years, due to the roles he has had to play.

In 1993 he had to lose a lot of weight to portray an Aids-stricken lawyer in 'Philadelphia', while in 2000 he had to play a fat man who becomes thin in 'Castaway'. He initially had to get his weight up to 16 stone before enduring a rigorous diet and exercise routine to play the man starving on a desert island.

He said at the time: "Being so overweight is not that pleasant. It affects your sleep, your legs, never mind your cholesterol. Then it was hard to lose - a lot harder than when I was younger."
